Little Autumn and Pumpkin Spice Lattes

As the summer months end and Autumn begins; it’s a season and time of
reflection. Time to gain new perspective on where we have been these last few
months and the fun that was had and the memories that were made and then
rearrange your focus to the road ahead!

Take a moment this week and set some goals for yourself so you can end 2014
on a good note. Is there something you have been meaning to do and haven’t
made time for it yet? Maybe you promised yourself you would start eating
better or making more time for exercise or making more time to spend in
meditation or with your family etc. What is holding you back from doing the
things you want to do?

I had a moment of revelation the other day. I was doing some personal
development and I was instructed to take a piece of paper and fold it in
half. On the left side, I was supposed to write all of my priorities down
from top to bottom and then on the right side of the paper I was supposed to
write down my daily activities and where I spent my time. I wish I could tell
you that everything lined up perfectly on both sides but that was NOT the
case at all. This week, take a moment to think about your list of priorities
and what you “say” is most important in your life and try to reflect that
with your actions. It’s easier said than done that is for sure but change is
never easy. It’s when we step outside our comfort zones that the best things
happen and the most growth takes place.

Dig deep this week friends!!! Pray everyone has a good rest of the week and
has a fun filled weekend!

I found this awesome Pumpkin Spice Latte recipe last year that would be
perfect for the upcoming months. I am a recovering starbucks addict so
I was on cloud nine when I stumbled upon this as a healthier
alternative. That is a huge part of creating a “healthy
lifestyle”–knowing your favorite foods and creating healthier versions

1 Cup Coconut Milk (almond milk would be fine too)
1 1/2 Tbsp Pureed Pumpkin
2 Tbsp Organic Vanilla Extract
2 Tbsp Raw Organic Honey (Optional-i use stevia and a little bit of
1/4 Tsp Ground Cinnamon
Pinch of Nutmeg or Allspice
1/2 Cup Strong Coffee or Espresso
Pinch of Cocoa Powder

Brew your coffee or espresso first however you like. I used Organic
Regular coffee and used about 2 Tbsp ground coffee to every 1 Cup of coffee.
In a sauce pan over medium heat, add milk, pureed pumpkin, and
raw honey until your coconut milk and steaming
Remove from heat, stir in vanilla, cinnamon, and nutmeg
Pour into the bottom half of a coffee cup, then pour in your strong
coffee or espresso on top of it
If you have or have made coconut whip cream you can add it on top and
then sprinkle with some cocoa powder
